¡Hola Members!

As some of you may have noticed, your box does not always contain the featured items discussed in this newsletter. Each week when we write the newsletter, we scour all of the boxes to see what’s inside! Some boxes are “chicas,” meaning they only contain half of the featured produce items, and goods. Even full CSA boxes (grandes or grande with goods) do not always contain every featured item. You may find three pints of strawberries in your box, for example, while some only have two!  Product and harvest availability is variable, so some boxes may get red romaine, while others get regular romaine. All of this is what makes getting a CSA box each month so exciting-you just never know what you’re going to get!

In this week’s CSA box, for example, many people will find a nice bunch of spinach. What a treat!

Spinach is well known for its health promoting qualities. One cup of spinach, boiled, contains over 1000% of your daily requirement for Potassium! Spinach is also high in Vitamin A, Vitamin C Manganese, and Folate.

Be careful when you’re cooking spinach-as many of you are used to cooking your dark leafy greens for up to ten minutes, spinach needs no more than 3 minutes to cook. Overcooking will leach out many of its beneficial vitamins and minerals!
